Potato Cakes

Have you heard of potato cakes? Or you might know them as air fryer potato patties, air fryer potato pancakes or air fryer potato fritters.

They are delicious and a fun alternative to air fryer gnocchi for using up leftover mashed potatoes.

Picture the scene, you have just had a big roast dinner and you have loaded your leftovers into the fridge for saving for later.

Everybody helped themselves and the meat, the gravy and the cheese sauce soon went, as well as those spare roast potatoes, because lets face it, nobody leaves roasties.

Because all the gravy has long gone, nobody wants the mash, but with mashed potato cakes it doesn’t need the gravy, instead it needs plenty of cheese.

These mashed potato cakes can also be cooked over foil and then you can lift them out by the foil, and they don’t make any mess at all in your air fryer basket i.e. no need to clean it!

Yes, you can reheat mashed potatoes in the air fryer, and I recommend you have a good read of our leftover mashed potatoes recipe. It’s a delicious quick method and perfect for when you have a few leftovers you want to cook together.

What Are Mashed Potato Cakes?

Mashed potato cakes are just how they sound.

Potato cakes from mashed potatoes.

Into a bowl you add leftover cold mashed potatoes, cheese, flour and a few other favourite leftovers and then use flour, breadcrumbs or oats to bind it all together.

You then shape them like mashed potato patties.

Potato Cakes Without Flour

When making a potato cakes recipe you will need something that can bind them together and so that they don’t turn to mushy mash as you air fry them.

The easiest option of course, is some potato cakes with flour, but if you want to bypass flour then you can swap it for some gluten free oat flour or something similar. This product is my favourite for an easy flourless swap.

Mash – Plenty of leftover mashed potatoes. The more leftover mash = the more delicious, mashed potato cakes you can make.

Cheese – Don’t be shy, add plenty of cheese to your mashed potato mixture. I love using a nice cheddar or some red Leicester or my all time favourite is double Gloucester.

Breadcrumbs – I recommend rather than flour, that you use breadcrumbs in your leftover mashed potato cakes. It gives a much better texture and helps make them crispy.

Seasonings – I prefer to keep things simple with salt, pepper and some dried chives but you can add in extra seasonings too if you want a different flavour.

FAQs

Can you put potatoes in tin foil in an air fryer? ›

Rub potatoes with butter mixture. Wrap each tightly in a piece of foil. Place potatoes in a single layer on tray in air-fryer basket. Cook until fork tender, 35-45 minutes, rotating halfway through.

Why are my potato cakes soggy? ›

To get those perfectly crispy edges and soft middles for these, be sure you cook these in a thin layer of oil. Too much oil and your cakes could be a little soggy. Also, letting the mashed potatoes chill for about an hour before you cook them helps the mixture stick together.

Why do my potato cakes fall apart? ›

If the potato cakes are falling apart because they are too wet it might not have enough flour. Troubleshoot this by adding more flour 1 tablespoon at a time until you get a better consistency, the mixture should be somewhat wet and will have a slight stickiness but you also don't want it falling apart.

What are potato cakes made of? ›

Mix mashed potatoes, flour, onion, egg, black pepper, and salt in a bowl until well combined, similar to a batter consistency. Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into the hot oil. Cook until golden brown, about 4 to 5 minutes per side; drain on paper towels.

Why can't you use aluminum foil in an air fryer? ›

Air frying uses the rapid circulation of hot air to cook and crisp your food. While lining your air fryer with foil might seem like a convenient way to minimize cleanup, it's not recommended. Foil can disrupt the airflow within the appliance, preventing food from cooking evenly.

Is it better to air fry with parchment paper or aluminum foil? ›

Laurence says she always chooses parchment paper over aluminum foil in the air fryer. Parchment paper is more versatile because it is non-reactive. "Whatever food you're putting on that aluminum foil is going to react with aluminum," Laurence says.

What's the best potato to use for potato pancakes? ›

Russet potatoes work best in this recipe because they have a high starch content, which helps to bind the pancakes together. I do not recommend substituting with red or yellow potatoes.

Are potato cakes unhealthy? ›

We already know fried potatoes like hot chips and potato cakes aren't good for our waistlines, but new research suggests swapping roast potatoes for non-starchy vegetables like steamed broccoli could improve blood pressure, especially for women. Just don't fall into the trap of 'demonising' the humble spud.

Why are my potato pancakes grey? ›

It depends on whether your potatoes are turning gray before you cook them or after. When you grate raw potatoes, you release starch that can cause them to oxidize, or turn dark. The best way to keep that from happening is to cover the potatoes with cold water, then drain them very well and pat them dry before cooking.

When were Potato Cakes discontinued? ›

Arby's Potato Cakes were discontinued in 2021 to make room for the new addition of crinkle-cut fries.

What are potato cakes called in America? ›

In some states it's known as a 'potato scallop', in others it's a 'potato cake', and for years the debate has been bantered back and forward between protagonists. “It might be a 'scallop' of potato but let's not confuse it with a serve of scallops!

What is another name for potato cake? ›

In Northern England and some states in Australia, a thin slice of potato that is battered and deep fried may be called a potato scallop. In Australia and New Zealand, the terms potato cake, potato flip and potato fritter may be used.

What do British people call potato cakes? ›

Bubble and Squeak (or Potato Cakes) is a British classic, and an easy and flexible recipe. You can make it from scratch OR use up leftover veggies. Flavorful, colorful, fluffy, creamy and so so good.

Why not to cook potatoes in aluminum foil? ›

Trapping that spud in aluminum foil where the moisture cannot escape results in a wet potato. Over baking the potato in foil cannot be seen (or easy to smell that it is overcooked) so you can end up with dark brown skin on the bottom, tough to eat and giving off a slightly burnt taste.

Is it safe to cook potatoes in aluminum foil? ›

So does that mean your potato is going to give you botulism if you cook it in tin foil? Not necessarily. Aluminum foil helps the skin on your potato stay nice and soft, and it is safe to use as long as you don't allow your baked potato to cool down to a dangerous temperature while still in the foil after cooking.

Do potatoes cook faster in tin foil? ›

Wrapping potatoes in foil does not hasten baking. On the contrary, since the foil itself has to be heated before the potato begins to bake, cooking times increase slightly. Not only do you get better baked potatoes when you bake them unwrapped, you also save money.

Should you cook potatoes in foil? ›

Don't wrap your potatoes in foil

"I see a lot of people using foil to wrap their potatoes in but this is a big no-no and causes soggy skins!" he says. Foil holds in moisture and steams the potatoes, resulting in a "boiled" taste and texture. Plus, without the use of foil, the skin will get extra crispy and flavorful.
